Eating your greens is never a chore at these three Singapore salad bars
Forget the rants and raves of Anthony Bourdain and Jeremy Clarkson against vegetarians, it’s a proven fact that a bowl of greens can do wonders for your health. For the cynics who view salads as just eating a bunch of leaves, a visit to three of Singapore's best salad bars will change that.
Salad Stop!
Tuna San salad
Who: Set up by father and son, Daniel and Adrien Desbaillets who saw a need for salads with a twist, Salad Stop! will grow five fold by its first birthday with the addition of an outlet at One George Street on the September 6 and another at the Marina Bay Financial Centre by November.
What you should order: You don’t come to Salad Stop! if you’re after plain greens. You can concoct your own leafy arrangement out of the 50-plus ingredients and 18 dressings on offer. Their salads are a twist on the norm, the Go Geisha combination of tofu and cabbage avoids blandness with the addition of coriander, soba noodles and the natural sweetness of snow peas, while the Jai Ho! escapes being classed as yet another chicken and potato salad with a healthy sprinkling of chickpeas and gently spiced yogurt dressing. To fulfil your carb cravings, ask for your greens to come wrapped in a warm spinach, sun dried tomato, wholemeal or wheat tortilla.
The extras: Come at breakfast time and opt for the hearty ham, cheese and egg wrap that’ll digest more easily than a McDonald's Egg McMuffin. They also stock a ready-made couscous salad, and quinoa and beetroot salad, yogurts and fresh juices for those who need to grab and go.

Mescluns
Feta and olive salad
Who: Led by Christophe Crot, a French-trained executive chef who has worked for the likes of The Pierre in New York, the concept here is simple -- pick a salad, add toppings, and complete it with dressing.
What you should order: While the tagline for this salad place is "Where Healthy Eating Starts," they’ve not forgotten to provide some nice extras in the form of Cajun spiced prawn, steamed asparagus and fried wanton skins so you can mix-and-match as you like. Should you have trouble thinking of a combination on the spot, cop out and order one of the ready-made salads: the robust Caesar salad and basil pesto chicken pasta salad are popular choices.
The extras: Not feeling like rabbit foot? Mescluns has four soups -- roasted pumpkin soup with ginger and coriander, tomato bisque with basil pesto, wild mushroom and a potato and leek soup with smoked salmon -- and five different sandwiches -- salmon, tuna, chicken, roast beef and smoked turkey -- on offer.

The Green Bar
Chilli crab salad
Who: The newest of the three, The Green Bar entered the salad game in May this year. Practicing an open menu policy, they invite customers to contribute recipes. At present, a customer’s Lebanese fattoush recipe is being experimented with.
What you should order: The Real Chilli Crab Salad, a warm salad of real crab meat -- hence the name -- with ribbon-shaped farfalle pasta, mixed mesclun leaves and dressed with a tangy chilli crab sauce. For lovers of dark meat, the Smoked Duck Surprise will satisfy, balsamic glazed slices of duck served on a bed of greens alongside chunks of roasted pumpkin and rosemary potatoes.
The extras: You can never go wrong with a salad-and-soup combination and you can always count on their creamy pumpkin soup to be on the menu.
