Millennials: Nothing is forever, now is the moment

After a hiatus of 6 years, I was thinking if I should actually revive blogging of my random thoughts and miscellaneous stuff on my blog. As it is, the current state of blogging is no longer just for personal ramblings, but more for commercial benefits. It is quite amazing to see how far this trend has gone. And now with Youtube, Facebook, Twitter, Instagram, and Snapchat, many of the initial bloggers have moved onto Vlogging, tweeting, Instastories, Snapchats, etc, etc.

The very transient nature of Instastories and Snapchat feeds seem to fit well with the modern millennials and their lifestyles. The whole idea of being in the moment, living the moment, sharing the moment, and then after 24 hours, it's gone like the wind. 

Nothing is forever, now is the moment.

Majority of millennials live for today, and rarely make long term plans. The same goes for their imbalance of expenditure versus their salaries, or the lack thereof. They sign and make purchases based on credit, sometimes from their own bank accounts, but mostly from their parents' money, even before they have the ability to make their own. Many of which own cars, gifted by their parents, way before they even started earning their first cent.

Perhaps it is in the pursue of matching up with their peers in terms of material possessions, or the building of one's ego, that drives them to spend whatever they earn on luxury or branded goods, as well as expensive food.

Gone were the days where McDonalds was just S$5 for an entire meal, where Secondary, Junior College and Polytechnic, and even University students were most often seen hanging out to study and what not. Starbucks and mid-range cafes and restaurants are now the norm amongst these students, with ala carte meals starting from at least S$15. That is 3 times the expenditure for a meal. Needless to say, even McDonalds has upgraded it's pricing and offerings to include more "gourmet" selections that go up to S$10+ for a set meal, in order to keep with the trend.

In terms of fashion and clothing, students no long make purchases from brands like Giordano and Bossini, but instead have upgraded to more high street brands such as Cotton On, Topshop, Topman, Zara, Dorothy Perkins, Gap, Adidas  Nike, Vans, Superga,  etc. And the price of clothing also does a significant jump. Trainers from Adidas and Nike used to be a "luxury" for us during school time, but now it is as common as the mandatory canvas white shoes we used to wear to school.

Thriftiness is also not common amongst millennials. Money comes easily to them, as all they have to do is usually just ask from their parents, so the idea of saving up is almost non-existent.

Sometimes I pity the parents that had to work so hard and scrimp on themselves just save money for their kids, but just to have their own Millennials kids waste it away in the blink of an eye.

This has nothing to do with the fact that the standard of living is no longer the same as the past. As this sense of everything being dispensable and easily replaced, even extends to the way they handle their own friendships, romantic relationships, and even marriages. Millennials fall in and out of love in with blink of an eye, and since they usually marry in their early or mid twenties, this translates to the rise of divorce amongst young married couples.

It is the innate core nature and principles of life of the generation of people that have changed. And it is very difficult to go back to the past when the people themselves are used to pampered from the day they were born. They never know what it was like to scrimp on food and transport in school, just to get enough money to buy something you really want or need.

RECIPE: Making beef bak kwa at home

Making beef bak kwa at home

Ingredients:
1kg minced beef
1 cup sugar
4 tbsp fish sauce
2 tbsp rice wine
1 tsp five-spice powder
2 tsp sesame oil
2 tbsp light soy sauce
1 tsp salt
1 tbs red food colouring



Method:
1. Mix all the ingredients except for the beef in a large bowl. Add the minced beef and marinate for at least 2 hours.
2. Preheat the oven to 100C/210F. Grease baking trays. I used 2 since it was all I could fit into the oven.
3. Oil the baking trays generously with cooking oil. Spread ( using the back of 2 oiled spoons ) the marinated minced beef thinly onto the baking trays, approximately 0.5cm or thinner.
4. Place the baking trays in the oven, either on the same shelf if your oven is big enough or on two different levels. Dry the mixture for 60 - 70 minutes with the oven door ajar. Switch the baking trays halfway through if they are on different levels. Flip the beef when one side of it becomes dry/slightly charred, in order to cook the underside. The time depends on how thick you’ve spread the mixture. It might be a plus minus 60 minutes. It really depends. You just have to watch and cook it till you think it’s best.
5. When done, the mixture will be semi-dry (some liquid from the marinade may appear around the beef) and the beef will shrink slightly away from the edges of the baking trays. Remove carefully from the trays and cut into smaller squares or rectangles as you wish.
6. Place all the meat onto a baking/grilling tray or broiler and bake for a further 5 to 8 minutes on each side. It should sizzle and caramelise nicely; make sure the edges do not become charred.

RECIPE: Organic Chicken Jerky (Organic Chicken Bak Kwa)

Organic Chicken Jerky (Organic Chicken Bak Kwa), adapted from Little Inbox
Ingredients:

  • 1/3 lb (150gm) organic ground chicken
  • 1tbsp light soy sauce
  • 3 tsp brown sugar
  • few squirts of honey
  • 1/2tbsp cooking wine
  • 1-2tsp canola oil


Directions: Mix all the seasonings in a bowl. Add 3/4 of seasonings (keep remaining in a bowl) into ground chicken; add in cooking wine, canola oil. Mix and combine well in a separate bowl, marinating the ground chicken, set aside for about 15-20mins. Preheat oven 350 degrees F. Lay the marinated chicken onto parchment paper lining a flat baking tray. Use another parchment paper* as the "tool" (or acting like a "glove") to press down the chicken, flat and thin.

Bake at 350 degrees F for about 15-20mins (Note: Do not cover the ground chicken with *parchment paper when baking). (Note1:At the halfway mark, remove tray from oven, brush the chicken with remaining seasoning + more squirts of honey; turn chicken jerky over on the parchment paper, then brush with more seasonings + more squirts of honey - this ensures more caramelization at the surface due to the honey and sugar). Send it back to oven with other side up and continue baking for the rest of 20 mins.

RECIPE: Homemade Pork Jerky (Bak Kwa/Yoke Gon/Long Yoke)

Homemade Pork Jerky(Bak Kwa/Yoke Gon/Long Yoke)


Ingredients:1 kg ground pork (50% fats and 50% lean meat)

Seasoning:

2 tsp fish sauce
2 tsp soy sauce
200 gm sugar
1/8 tsp 5 spiced powder
1/2 tsp cinnamon powder
1/2 tsp white pepper
1 tbsp oil
2 tbsp Chinese wine


Method:

1:Combine ground pork with all the seasoning,mix well.Pre-heat oven to 250 F.
2:Prepare 2 large baking sheet with parchment paper or baking sheet .Spread meat as thinly as possible to cover the whole sheet. Use spatula or flat knife to smooth surface.
3:Bake in oven for 15 minutes or until firm to the touch.Remove from oven and using a scissor or pizza knife to cut meat into your desire size or shape.
4:Turn oven setting to broil or you can use open grill to grill the final step of bak kwa.This is critical step,must watch the flame in order not to burn the meat.
5:Serve bak kwa with bread as sandwich or as it's...


#1:Combine the meat with all the seasoning,mix well

#2:spread the meat mixture as thin as you can on the baking sheet lined with parchment paper

#3:bake meat in the oven for 15 minutes or until firm
#4:remove meat from oven
#5:use scissor or pizza knife to cut the meat to your desire size or shape
#6:then use broiler or open grill to grill the meat for the final part..

Though skinny belts are certainly in their prime this spring, they aren't the only waist-hugging option you can incorporate into your wardrobe. Behold our current obsession du cinch: the black sash! No longer relegated to little girls' party dresses or bridal gowns, the black sash is now defining waists on both runway looks and red carpets alike. Whether it's snugly tied in a small, prim bow or long and loosely knotted, ladies like Eva Mendes and Emmy Rossum are embracing this easy-to-wear accent and we think you should too. It adds a touch of unfussy attitude to anything it's paired with—whether that's rainbow bright stripes or romantic frocks—which is why we're spotlighting black sashes in today's Accessory Report!


Now, if you're searching for a top-tier runway reference for this sweet accessory trend, look no further than Sonia Rykiel's colorful S/S 11 collection. Rykiel showcased a slew of sashes—specifically, obi-like belts—wrapped around pleated paperbag pants, color-block cardigans, and tops with zippy stripes. Speaking of the latter, we love how Rykiel used a knotted black sash to break up the contrasting stripes of the Cotton Stripe Multi Stripe Sweater ($795, 212.396.3060) and Cotton Stripe Plisse Culottes ($890, 212.396.3060) combo shown above. The resulting outfit is playful without being overly girly, and decidedly refreshing.


Of course, there are many ways to wear the black sash, most of which do not involve sporty stripes. In fact, the majority of our celebrity examples seem to prefer the sash as an accompaniment to their dressier, print-free looks. In these instances, the dash of black serves as a palette cleanser, removing some of the sweetness from unabashedly feminine pieces. For example, last month Emmy Rossum attended a party celebrating Genlux's Winter Issue wearing a head-to-toe DKNY runway look comprised of the brand's Maraschino Silk V-Neck Shirt ($195, 800.231.0884), Rouge Cotton Poplin All Over Frill Skirt ($395, 800.231.0884), Black Cotton Twill Sash ($45, 800.231.0884), and Rouge/Maraschino Leather Ankle Strap Pumps ($395, 800.231.0884). Now, imagine that pink ruffled skirt and red blouse without the black accent at the waist—very different right? "The bow sash is like a perfect frame—it gives definition to the look," says Jane Chung EVP of DKNY Design, and we completely agree. In this case, it keeps the colorful combo from looking too girly and really elevates the outfit: talk about a high-impact accessory! Carolyn Murphy used a sash in a similar way a few months ago, when she arrived at a celebration for W magazine's September issue. The supermodel made her peach chiffon dress look a little stronger by adding a short black sash—tied in a jaunty, off-center bow—and black ankle boots for a thoroughly delightful ensemble.


In addition to taming an ultra-feminine frock, a bow-tied sash can also be used to update a retro-inspired piece, as Eva Mendes and Lea Seydoux demonstrated recently. Mendes attended the 2011 Spirit Award nominations in Hollywood wearing Peter Som's Bouquet Floral Chiffon Dress ($2475, 212.221.5991), which comes with a long sash. Alone, the floral maxi would have a very '70s bohemian look, but the addition of the statement sash takes the dress out of that specific era and makes it much more contemporary. Leydoux gave us another great example when she attended the Los Angeles premiere of Somewhere in a '50s-inspired, sleeveless, button-up dress. The combination of the full, flouncy frock and retro ankle-strap heels give off a ladylike charm, but the sash tied in the middle keeps it from feeling saccharine.


Happily, executing this smart dressing idea is a rather simple task. First and foremost, you need a sash. Our suggestion: head American Apparel and pick up The Sash ($16), or try to snag DKNY'sRunway Sash Belt ($45) or Halston Heritage's Skinny Sash Belt ($95). From there, if you're looking to recreate Emmy Rossum's sweet combo for Valentine's Day or just love a fresh pop of color, try pairing Equipment's Hard Feelings Blouse ($175) in Red with either ASOS' Flippy Hem Jersey Mini Skirt($26) or Kimichi Blue's Full Skirt ($48). Just make sure to tie your sash in a prim bow and shift it to the side to give your look a Rossum-inspired playful finish. Those of you who love Eva Mendes' take on the trend will want to pick up a floral maxi or two. Our favorites are Lipsy's Lace Trim Floral Maxi Dress ($107) and Rebecca Taylor's Runway Dress ($407); both floor-grazing frocks will take you straight through spring and summer. Finally, to master Lea Seydoux's retro pick, you should definitely check out Topshop's Cream Spotted Scallop Collar Dress ($55). Simply tie your sash so that it hangs in a loose bow in the center and you'll have nailed this look!


Of course there are a handful of lovely, ready-made styles available too! For example, we are head-over-heels in love with the relaxed fit of L'Agence's Ruffle Front Tank Dress ($340) and adore Madewell's simple and sophisticated Snapshot Dress ($145). Nasty Gal's Fuschia Silk Wrap Dress ($94) is also definitely worth checking out—the price is right and its bold color is a fresh choice for spring!
