RECIPE: Prawn Crackers
How To Make Prawn Crackers
RECIPE GUIDELINES
The recipe should be looked at as a guideline for ingredient ratios. The aim is to try to keep the ratio of prawn meat to tapioca starch at 1:1 or less (ie more prawn than tapioca starch).
- 1 kg whole prawns to yield 500g prawn meat after deheading and shelling
- 100g tapioca starch for making paste & additional 400 g tapioca starch for making dough
- 200ml prawn stock (made from heads and shells)
- 3 - 4 tspn salt or to taste
- ground white pepper
- 2 tspn baking powder
Prepare Prawn Stock
Remove heads and shells from prawns. Using a small sharp knife, de-vein the prawns by making a slit along the back of each prawn and removing the intestinal tract. Dry the prawn meat with
kitchen paper and set aside.
Place the heads and shells into a large pot with enough water to barely cover.
Bring to the boil and cook, uncovered, until the liquid is reduced to approximately 300 ml. The reduced volume of liquid doesn't have to be precise at this stage - the aim is to get as much flavour out of the heads and shells as possible and achieve a concentrated prawn stock.
Make Prawn Starch Paste
This is akin to the sour dough starter in bread making.
Strain the heads and shells from the prawn stock and measure the amount of stock. Weigh the prawn meat. For every 500 g of prawn meat, you require 200 ml of liquid. If the stock is greater than 200ml, boil it down to 200 ml. If you have say only 425 g prawn meat, boil the stock down to 170 ml. The arithmetic for the ratio calculation is as follows:
425 ÷ 500 = 0.85 or 85% of the base reference weight of 500 g
Therefore, you only need 85% of the 200 ml liquid that applies for 500 g prawn meat. 85% of 200 ml is 170 ml.

Weigh out 100 g of tapioca starch for 500 g prawn meat. Again, if you have less prawn meat, use proportionately less. Sift the starch into a small bowl.
Gradually add boiling hot prawn stock to the starch to make a sticky paste. If your stock is very dense, it will be more like a dough ball as illustrated in this picture.
Prepare The Prawn Meat Paste
In a
food processor fitted with a steel blade, blend the prawn meat together with salt and pepper to a fine paste.

Add the tapioca starch paste that you have made in the previous step and blend until the mixture well combined and homogenous.

Make The Dough
Sift 400 g tapioca starch with 2 teaspoons baking soda in a large bowl. Transfer the prawn paste to a separate large bowl.
Gradually work the sifted starch into the prawn paste until you get a malleable dough. You don't want the dough to be too dry: add only enough starch to take the dough to a state where it can be easily handled and formed into rolls.
Depending on how damp the prawn paste is (which depends on how well you dried off the prawns and the stickiness of your tapioca starch paste), you may not need all 400 g tapioca starch. And that's a good thing as it means you will have a very high prawn content in your crackers!

Form Dough Into Rolls; Then Steam
Form the dough into cylindrical rolls of between 3 to 5 cm in diameter. You can do this "free hand". What I do to get evenly shaped cylinders is to roll the dough using a sushi mat lined with cling film.
Lightly grease the base of steamer trays or line them with damp muslin. You can use large
bamboo steamers similar to the ones you see at dim sum places but they retain the smell of prawns afterwards. However, as they are relatively cheap, you can just throw them out after each use. Don't put the rolls on plates to steam as water will collect on the plate and turn your dough into a soggy mess.

Steam the rolls over rapidly boiling water for about 45 minutes to 1 hour, depending on the diameter of your rolls. If your steaming vessel doesn't have a vented lid, either leave the lid slightly ajar to allow steam to escape or drape damp muslin or tea-towel over the rolls to stop condensation whilst they are cooking.

Slice The Rolls To Form Crackers
Place the cooked rolls on a wire rack to cool completely. Wrap each roll with cling film and refrigerate overnight. This allows the rolls to firm up for easy slicing.

Dry The Prawn Cracker Slices
It is important the crackers are thoroughly dried and very hard. They will not puff up properly on frying if there is moisture present.
Prawn crackers are traditionally sun-dried, a process which takes several days and good weather on your side. Drying overnight in a dehydrator is the most efficient way but in the absence of a dehydrator, leave them on wire racks in a dry airy place (a sunny spot is ideal but not essential) for at least 24 hours until quite well-dried out and then complete the drying in a very low oven for several hours.
To dry the crackers in a dehydrator, spread the slices in single layers on the food dehydrator trays. Set the
dehydrator at the lowest setting (35ºC) and dry the slices for at least 18 hours.

When they are completely dry and hard, store them in an air-tight container in a cool dry place until required. I keep mine in the refrigerator.

Frying Prawn Crackers
Deep fry the crackers in very hot oil. As they will puff up within seconds of being placed in the oil, fry only 4 -5 crackers at a time so that you can remove them very quickly. Drain the cooked crackers on kitchen paper.
They can be served immediately or stored in a large air-tight jar (you'll find the jar empties very quickly!). Enjoy!

RECIPE: Making beef bak kwa at home
Making beef bak kwa at home
Ingredients:
1kg minced beef
1 cup sugar
4 tbsp fish sauce
2 tbsp rice wine
1 tsp five-spice powder
2 tsp sesame oil
2 tbsp light soy sauce
1 tsp salt
1 tbs red food colouring
Method:
1. Mix all the ingredients except for the beef in a large bowl. Add the minced beef and marinate for at least 2 hours.
2. Preheat the oven to 100C/210F. Grease baking trays. I used 2 since it was all I could fit into the oven.
3. Oil the baking trays generously with cooking oil. Spread ( using the back of 2 oiled spoons ) the marinated minced beef thinly onto the baking trays, approximately 0.5cm or thinner.
4. Place the baking trays in the oven, either on the same shelf if your oven is big enough or on two different levels. Dry the mixture for 60 - 70 minutes
with the oven door ajar. Switch the baking trays halfway through if they are on different levels. Flip the beef when one side of it becomes dry/slightly charred, in order to cook the underside. The time depends on how thick you’ve spread the mixture. It might be a plus minus 60 minutes. It really depends. You just have to watch and cook it till you think it’s best.
5. When done, the mixture will be semi-dry (some liquid from the marinade may appear around the beef) and the beef will shrink slightly away from the edges of the baking trays. Remove carefully from the trays and cut into smaller squares or rectangles as you wish.
6. Place all the meat onto a baking/grilling tray or broiler and bake for a further 5 to 8 minutes on each side. It should sizzle and caramelise nicely; make sure the edges do not become charred.

RECIPE: Organic Chicken Jerky (Organic Chicken Bak Kwa)
Organic Chicken Jerky (Organic Chicken Bak Kwa), adapted from Little Inbox
Ingredients:
- 1/3 lb (150gm) organic ground chicken
- 1tbsp light soy sauce
- 3 tsp brown sugar
- few squirts of honey
- 1/2tbsp cooking wine
- 1-2tsp canola oil
Directions: Mix all the seasonings in a bowl. Add 3/4 of seasonings (keep remaining in a bowl) into ground chicken; add in cooking wine, canola oil. Mix and combine well in a separate bowl, marinating the ground chicken, set aside for about 15-20mins. Preheat oven 350 degrees F. Lay the marinated chicken onto parchment paper lining a flat baking tray. Use another parchment paper* as the "tool" (or acting like a "glove") to press down the chicken, flat and thin.
Bake at 350 degrees F for about 15-20mins (Note: Do not cover the ground chicken with *parchment paper when baking). (Note1:At the halfway mark, remove tray from oven, brush the chicken with remaining seasoning + more squirts of honey; turn chicken jerky over on the parchment paper, then brush with more seasonings + more squirts of honey - this ensures more caramelization at the surface due to the honey and sugar). Send it back to oven with other side up and continue baking for the rest of 20 mins.

RECIPE: Homemade Pork Jerky (Bak Kwa/Yoke Gon/Long Yoke)
Homemade Pork Jerky(Bak Kwa/Yoke Gon/Long Yoke)
Ingredients:1 kg ground pork (50% fats and 50% lean meat)
Seasoning:
2 tsp fish sauce
2 tsp soy sauce
200 gm sugar
1/8 tsp 5 spiced powder
1/2 tsp cinnamon powder
1/2 tsp white pepper
1 tbsp oil
2 tbsp Chinese wine
Method:
1:Combine ground pork with all the seasoning,mix well.Pre-heat oven to 250 F.
2:Prepare 2 large baking sheet with parchment paper or baking sheet .Spread meat as thinly as possible to cover the whole sheet. Use spatula or flat knife to smooth surface.
3:Bake in oven for 15 minutes or until firm to the touch.Remove from oven and using a scissor or pizza knife to cut meat into your desire size or shape.
4:Turn oven setting to broil or you can use open grill to grill the final step of bak kwa.This is critical step,must watch the flame in order not to burn the meat.
5:Serve bak kwa with bread as sandwich or as it's...

Though skinny belts are certainly in their prime this spring, they aren't the only waist-hugging option you can incorporate into your wardrobe. Behold our current obsession du cinch: the black sash! No longer relegated to little girls' party dresses or bridal gowns, the black sash is now defining waists on both runway looks and red carpets alike. Whether it's snugly tied in a small, prim bow or long and loosely knotted, ladies like Eva Mendes and Emmy Rossum are embracing this easy-to-wear accent and we think you should too. It adds a touch of unfussy attitude to anything it's paired with—whether that's rainbow bright stripes or romantic frocks—which is why we're spotlighting black sashes in today's Accessory Report!
Now, if you're searching for a top-tier runway reference for this sweet accessory trend, look no further than Sonia Rykiel's colorful S/S 11 collection. Rykiel showcased a slew of sashes—specifically, obi-like belts—wrapped around pleated paperbag pants, color-block cardigans, and tops with zippy stripes. Speaking of the latter, we love how Rykiel used a knotted black sash to break up the contrasting stripes of the Cotton Stripe Multi Stripe Sweater ($795, 212.396.3060) and Cotton Stripe Plisse Culottes ($890, 212.396.3060) combo shown above. The resulting outfit is playful without being overly girly, and decidedly refreshing.
Of course, there are many ways to wear the black sash, most of which do not involve sporty stripes. In fact, the majority of our celebrity examples seem to prefer the sash as an accompaniment to their dressier, print-free looks. In these instances, the dash of black serves as a palette cleanser, removing some of the sweetness from unabashedly feminine pieces. "The bow sash is like a perfect frame—it gives definition to the look," says Jane Chung EVP of DKNY Design, and we completely agree. In this case, it keeps the colorful combo from looking too girly and really elevates the outfit: talk about a high-impact accessory! Carolyn Murphy used a sash in a similar way a few months ago, when she arrived at a celebration for W magazine's September issue. The supermodel made her peach chiffon dress look a little stronger by adding a short black sash—tied in a jaunty, off-center bow—and black ankle boots for a thoroughly delightful ensemble.

The combination of the full, flouncy frock and retro ankle-strap heels give off a ladylike charm, but the sash tied in the middle keeps it from feeling saccharine.
Happily, executing this smart dressing idea is a rather simple task. First and foremost, you need a sash. Our suggestion: head American Apparel and pick up The Sash ($16), or try to snag DKNY'sRunway Sash Belt ($45) or Halston Heritage's Skinny Sash Belt ($95). From there, if you're looking to recreate Emmy Rossum's sweet combo for Valentine's Day or just love a fresh pop of color, try pairing Equipment's Hard Feelings Blouse ($175) in Red with either ASOS' Flippy Hem Jersey Mini Skirt($26) or Kimichi Blue's Full Skirt ($48). Just make sure to tie your sash in a prim bow and shift it to the side to give your look a Rossum-inspired playful finish. Those of you who love Eva Mendes' take on the trend will want to pick up a floral maxi or two.
